I know, I know... this isn't technically a 'dinner'. But I wanted to include this recipe for two reasons: 1. It's delicious and 2. It's peach season (!!!). And honestly, you could it for dinner if you really wanted to. I mean, theres even a vegetable and in there everything! Plus protein and healthy fat (balanced macros, for the win). I am sharing this smoothie recipe because while I do make a good amount of smoothies, I'm a strong believer that most don't need a "recipe". If you like smoothies, you can likely make a good one from whatever fruits, protein powders, and vegetables you have in your fridge. This smoothie one was one of those 'happy accidents' that resulted from me combining a peach with some leftover cooked cauliflower rice in hopes that I'd be able to sneak some extra veg in without it tasting too bad. To my delight and surprise, the cauliflower blended in smoothly, didn't leave a funny taste, and tapered the sweetness of my peach + vanilla protein powder combination! YUM. I had to share this, because it's the perfect smoothie combination for anyone as obsessed with peach season as I am.
Peachy Vanilla Smoothie with Cauliflower
1 ripe peach
1 cup Pre-cooked cauliflower
1 cup your favorite nondairy "milk" (I used coconut!)
A scoop of your favorite vanilla protein powder (I used this vanilla bone broth protein -- it's super tasty!)
a dash of vanilla extract
Optional: Throw in a few ice cubes if you're extra chill
Combine all ingredients a blender and wa-lah! Like a peachy Orange Julius, except actually good for you.
